Lavender (lat.Lavandula angustifolia) has a honey aroma, sweet flavor with notes of citrus.
In the desserts it gives a real touch!
Recipe from magazin "Iće&Piće", no.20, July 2010
300 ml milk
200 ml heavy whipping cream
3 teaspoons fresh lavender flowers
5 sheets of gelatin
3 egg yolks
100 g sugar
1 vanilla sugar
150 g cottage cheese
Boil 100 ml milk and cream with fresh lavender flowers.
Remove the mixture of the milk and cream from the heat and leave it on the side for 30 minutes.
Meanwhile, soak gelatin in water to soften. When the gelatin has softened, dissolve it in milk on medium temperature.
Beat by hands egg yolks with sugar and vanilla sugar in the creamy mixture, also on the medium temperature (make sure not to made a clumps).
Pour the hot milk mixture into the still hot yolk mixture, then add cottage cheese.
Beat remaining whipped cream and pour it into above preparated mixture.
Pudding molds (or other molds) pour in the cold water and pour the prepared mixture into it.
Let the lavander cream stand at least 2 hours, preferably overnight.
Serve with fresh berries, optional.
